Description

Mr. Ishida of Okuizumo Tofu Ishida is a tofu master with over 32 years of experience in tofu production. By purchasing beans directly from farmers, he has developed a locally-based sustainable business that minimizes the use of pesticides. Because Mr. Ishida’s tofu is made by hand, it has an incredibly soft and smooth texture, unlike tofu made by mass-producers. The tofu in this experience is made using a simple method using soy milk from local soybeans and natural bittern. Still, visitors can enjoy the difference in taste created by the “yose” method and the original flavor of the tofu produced from carefully selected ingredients. It also teaches the key points to consider when buying tofu in everyday life.

Itinerary

1 After registration, explanation of precautions, etc.
2 Mr. Ishida will talk about local soybeans and tofu .(30 minutes)
3 Tofu-making experience: Warm a mixture of soybeans and water, strain it, and separate it into okara and soy milk. You can add natural bittern to the soy milk and observe until tofu is ready. (120 minutes)
4 We will eat the finished tofu. (30 minutes)
5 Dismissal.
