In Okuizumo, soba isn’t just food,it’s heritage. Blessed with rich soil, pristine water, and ideal climate conditions, this region is renowned for growing top-quality buckwheat. Here, soba is crafted using whole kernels ground with a stone mill, creating a deep aroma and rich flavor with a distinctive dark hue.
Locals have their own beloved ways of eating soba, such as “warigo soba,” where dipping broth is poured from one tier to the next, and “kama-age,” where noodles and their boiling water are served together for guests to season themselves.
This hands-on experience welcomes you into this flavorful tradition, where you’ll learn the steps from flour to noodle, under the guidance of seasoned soba artisans. Using authentic tools and techniques, you’ll create soba from scratch,and best of all, you’ll taste your creation on the spot.
